I have just dug my elecampane roots at the end of their second year.  We are into January so we have had a number of frosts/freezes.  As I am slicing the lateral roots I see that some are the nice pale color I was expecting but most of them have dark, almost black, growth rings.  Is this normal? Are the dark ones okay?  The roots look healthy from the outside.  Is this because I waited until well into winter to harvest them?  Also, is the bulbous part just below the ground good medically or are the lateral roots better?

growth rings in some roots are pretty normal. As long as the tissue looks healthy I’d use it. The base of the plant is good too.
