Winter is coming and I now that the leaves will fall off most of my perennial (such as Blackberry). Is there any reason I can’t pick off most/all of the leaves before the first freeze? Will it somehow damage the plants?

I know my hollyhock, mallows and other will stay green in the winter so I wouldn’t pick too may of them
