My lemon balm didn’t really start producing until after summer started. I know it’s supposed to be harvested in the spring, but if I harvest it now will it still work in a pinch?

My wife and I grow lemon balm and just harvested some this morning to make a delicious lemon balm tea

Lemon Balm is hardy from zone 4 to 9.  It grows best in cool weather.  I live in Virginia and my plants grow well in the spring, slow down in mid summer and then grow more in the fall.  Today I harvested a large amount to dehydrate and should be able to harvest more for a couple more months.
A nice tea I enjoy in the evening is lemon balm, chamomile and lavender – guaranteed a restful nights sleep 😴

It depends where and how it’s growing. If it’s been really hot and dry it won’t be as strong. Luci and I just did a video on harvesting lemon balm. I just put it up on the lemon balm lesson page.
