mugwort root?

Hi all! I grew a couple varieties of artemesias last and this year in my patio container garden. While culling planters of mugwort (Artemesia vulgaris) I thought ‘why discard these tangles of mostly small roots? I soaked them for a couple of days in water. Then after multiple thorough rinses have been in my fridge for about a week in clean water.

The water has a nice mild flavour.

Safe for drinking? Any precautions?

I’ve only ever heard of using the aerial parts.
