August 18, 2012 at 5:09 AM #33126 Beverly Hi Doc, I just finished watching your Purslane video. I have plenty in my yard. Questions: Do I dig the root out and eat/use it? Can I dry this and maybe grind it up to put in or on top of other foods? Will the nutrition values still remain if I do that? Thanks! Beverly August 18, 2012 at 11:57 AM #33127 Dr. Patrick JonesHomestead InstructorTopic Author All the upper parts of the plant are edible (leaves and stems). I don’t know if the root is. I”ve not tried drying it but don’t know why you couldn’t. July 9, 2015 at 1:10 AM #34694 cherig when is the best time to harvest purslane? I have a bumper crop going. 🙂 Does it dry well with the omega 3 oil type stuff in it? July 9, 2015 at 2:37 AM #34697 IdahoHerbalist A person I talked to about drying it (Patrick?) said it took a VERY long time. I would put it in a blender and then freeze the result in ice cubes. Not the best way for preserving, but the best I think. Harvest when you like the taste of it, probably before it flowers. July 9, 2015 at 9:16 PM #34698 Dr. Patrick JonesHomestead InstructorTopic Author I think it was on the last herb walk that somebody said they tried to dry it. Said it took forever. It’s pretty tough to dry oil. I’d just freeze it whole and throw it in smoothies all winter.
