StudentDr. DaVanzo,
The Illustrated Encyclopedia of Healing Remedies by C. Norman Shealy MD, PhD has a section about Ayurvedic medicine. It has about 30 pages dedicated to Ayurvedic medicine. It also covers Chinese herbalism, traditional home and folk remedies, herbalism, aromatherapy, flower essences, homeopathy, and vitamins & minerals. It might be a good introductory book to review and compare these healing remedy sources.

Studenthello!
the cool thing about Ayurveda is that it is based on the Vedas- books that are fundamental to understanding the science and principles of the modality:)
I would recommend ‘Ayurveda- The Science of Self Healing’ by Vasant Lad to start- it’s a small book with lots of information for someone who is interested in learning about the topic. You can also look into Caraka Samhita and Astanga Hirdayam- they are both classical texts used by gurus and doctors alike and are fairly simple to read- not as a novel but as a reference book to familiarize yourself with. Hope these help!

Student3 books come to mind for this audience:
Perfect Health: The Complete Mind/Body Guide by Deepak Chopra, MD is a great overall book discussing Ayurveda. It also has a quiz so you can get an idea of your own constitution. It was the prerequisite book before I went through Ayurvedic Training.
The Ayurvedic Cookbook by Amadea Morningstar is a great book full of intro information about Ayurveda and offers information on the energetics of ingredients and so many great recipes you can select based on the doshas (your body type, the season, etc.)
Ayurvedic Medicine: The principles of Traditional Practice by Sebastian Pole is a very in depth book describing the energetics, uses, and contraindications for many of the Ayurvedic Herbs/Plants. Unfortunately, they do not have all the common herbs we find here on Homesteady, but that’s why we are grateful for this great platform!
