I like to make use of my plants and purchase less.  Harvesting parsley leaves is common for culinary and medicinal.  Don’t let parsley roots go to waste.  I used to purchase roots. If you still have any from last growing season dig the long narrow roots before they come up for the 2nd year (biennial).  If the roots are left to harvest after the 2nd year they turn woody.  And you will have wonderfully fresh parsley root.  You can gently rinse off dirt/debris, cut and dry for further use.  And save some money too.  :). If your soil is clay, might try using a garden fork to loosen the soil…think of digging thin carrots.
